Hesaru Bele Beetroot Kosambari is a healthy and delicious salad made with grated Beetroot, soaked moong dal, grated coconut, coriander and lemon juice, a traditional side dish of Karnataka, commonly served as a side dish in many occasions. A few ingredients when put together makes a heavenly combination. Beetroot is not only colourful but also a healthy vegetable, This is one of the tasty and healthy salad for the dieters. A best refreshing salad for summer. 

Ingredients:

Fresh beetroot – 2 medium grated

Moong dal – 1/4 cup soaked

Coconut – 1/2 cup shredded

Coriander –  3 tbs chopped

Green chilies – 1 or 2 chopped

Fresh lemon juice – 1 or 2 tsp adjust to your taste

Salt to taste

For seasoning –

Mustard – 1/4 tsp

Curry leaves – 1 spring

Dry chilies – 1 or 2 no’s

Hing – 2 pinch powdered

Oil – 1 tsp

 

Method:

Soak moong dal for 30 min, then drain the water in it with a colander, Keep all the other ingredients ready,

Add grated beetroot, grated coconut, coriander, chopped green chilies, salt to taste, mix properly, squeeze fresh lemon juice into it, to adjust to your taste.

For seasoning – heat oil in a tadka pan, when it is hot add mustard allow it to sizzle in oil, add curry leaves and dry chilies fry until curry leaves splutters, add hing remove from the flame, allow it to cool. Add prepared seasoning (along with the oil in it) to beetroot mixture, toss it well.

Serve as a side dish for sambar rice or rasam

Note –

To enhance the taste of the dish you can also add roasted peanuts in preparation.

Always prefer to add lemon juice before you serve.

You can also add finely chopped cucumber in preparation which is optional.
