Beetroot raita is a Nutritious and colorful side dish prepared with grated beetroot. The best side dish to serve with Rice/ Biryani. Beetroot is very healthy as it lowers pressure provides nutrients to our body and is great for anemic patient’s. The curd is a very good source of vegetarian protein and both curd and beetroot make a rich and a healthy combination.
Beetroot – 2 medium
Curd/Yogurt – 200 ml
Coriander – 1 tbs chopped
Salt to taste
For seasoning –
Mustard – 1/4 Tsp
Cumin – 1/4 tsp
Chana dal and Urad Dal – 1/2 Tsp
Green chili or Dry chilies – 2 no’s cut into small pieces
Curry leaves – 1 spring
Asafoetida – 1 pinch powdered
Oil – 1/2 tsp
Peel beetroot steam it for 15 mins or pressure cook for 3 whistles, once done allow it to cool,
Grate the cooked beetroot. Transfer it to a bowl, mix it with curd add salt to taste, then add chopped coriander mix once again.
Heat a pan with oil in it, when it is hot sizzle mustard, then add cumin when it starts to splutter add urad dal, fry until it turns to light brown, then add Asafoetida, dry chili, and curry leaves, when the curry leaves start to splutter remove from the flame.
Add the prepared seasoning to beetroot mixture, Give it a mix. Enjoy !!!
