Broken Wheat or Cracked Wheat is an excellent source of fiber and very nutritious, a simple and easy sweet dish made with Broken Wheat, jaggery, cardamom powder, an easy and healthy dessert. I have used Milk for making this dish or you can also use Coconut Milk in preparation. Go ahead and enjoy this delicious Payasam /Kheer for any occasions.
Broken wheat – 1/2 cup
Milk – 500 ml boiled and cooled /fresh coconut milk
Water – 1 cup
Grated jaggery – 1 cup
Cashew nuts – 10
Raisins – 10
Ghee – 2 tablespoons
Almond – 2 Tsp chopped
Cardamom powder – 1/2 teaspoon
Saffron strings – a pinch
Heat 1 tablespoon of ghee in a pan. Roast Broken wheat on a low flame for 6 to 7 minutes till the raw smell goes away. Keep aside.
In the same pan, add another 1 tablespoon of ghee. Add cashew nuts and chopped almonds, fry till golden. Then add raisins. Stir fry for 10 seconds and set aside.
Pressure cook the roasted broken wheat with 1 1/2 cups of milk and 1 cup of water till 3 whistles and cook on a low flame for 5 min and turn off the flame
Heat a heavy bottomed vessel. Add grated jaggery and a little water. Once the jaggery water starts boiling, add cooked broken wheat.
Cook for 7 to 8 minutes by stirring in between and bring to a thick consistency
Dissolve saffron strings in 2 tablespoons of milk for 10 to 15 minutes. Then add to the kheer and combine together, add remaining milk or fresh coconut milk stir, bring it to boil for few minutes and remove from the flame.
Add cardamom powder, fried cashew nuts, and raisins and mix well.
Serve warm or chilled.
