Carrot beetroot salad is a healthy and tasty salad, An easy to make salad with fresh carrot, beetroot, onion, grated coconut and roasted peanuts, tossed with simple spices which makes a yummy salad, which is just irresistible in taste, just one can’t stop eating it... Just try and enjoy for any time of the day
Fresh carrot – 2 no’s finely chopped/minced
Beetroot – 1 small finely chopped
Onion – 1 medium finely chopped
Coconut – 1/2 cup grated/shredded
Roasted peanut – 3 tbs
Chili powder or green chilly paste – 1/2 tsp (adjust to your taste)
Cumin powder – 1/2 tsp
Vegetable oil – 1 tbs or 1 1/2 tbs
Salt to taste
Fresh Lemon juice – 1/2 tsp optional
Coriander – small bunch chopped for garnishing
Chop all veggies as finely as possible, or chop it in a food processor and keep ready.
Add veggies in a bowl, add all spice powder and salt to taste, toss it well
Add vegetable oil toss again, finally add roasted peanuts toss it well.
Garnish with fresh lemon juice and chopped coriander. Toss it well.
Healthy and nutritious vegetable salad is ready to enjoy for any time of the day.
You can add raw mango (finely chopped) in preparation which makes a great combination with carrot and beetroot.
