Carrot Coconut Burfi is delicious and easy to make home-made sweet. Prepared with freshly grated carrots, This recipe is similar to Coconut Barfi Just adding carrots enhances the taste and flavour. A unique and appetizing sweet dish for any occasions.
Carrot – 1 bowl
Coconut – 1 bowl grated/shredded
Sugar – 3/4 bowl
Milk – 1/2 cup
Almond – 2 tbs chopped
Cardamom powder – 1/4 tsp (optional)
Ghee – 2 tbs
Grease a Plate/tray or mould with ghee and keep ready.
Heat a heavy bottomed vessel with ghee, when it is hot add grated carrot, saute until raw smell goes, saute for 5 mins.
Now add coconut, saute for 5 mins on a medium flame
Add sugar, saute
Add milk, keep stirring
When the mixture reaches to thick in consistency,
The mixture will become soft & release a little water.
Then add cardamom powder and mix again. Remove from the flame.
Empty the mixture onto the pan and spread it well.
Sprinkle chopped almonds, Allow the burfi to cool and cut it into pieces.
