Homemade coconut milk from shredded coconut for a healthy and inexpensive milk alternative, it is an easy to make recipe, for cooking south Indian rice and curry recipes, payasams, and also for making milkshakes with thin coconut milk and the milkshakes are really refreshing and light.
Coconut – 1 cup
Hot water – 1 cup
Take grated coconut in a blender
Add 1/2 cup of hot water (little hot than lukewarm water but not boiling water) and blend it for 2 to 3 min then add remaining water and blend it once again for few more seconds
This is the thick milk or first extract, take a strainer and strain it, collect the milk. It can be used for preparing curries, sweets etc
Collect the coconut extract add another cup of water and blend it for 2 to 3 sec and collect the milk separately which will be thin in consistency. It can be used for making rice or milkshake along with the thick milk.
Fresh coconut milk is ready. use it fresh in your cooking. you can also refrigerate and use the coconut milk later.
