Cucumber salad/southekai pachadi is a south Indian salad served as a side dish in traditional festivals or any occasion.Everyone will love to have cucumber salad as a side dish. Eating cucumber has numerous health benefits for hair, skin to beat heat in summer. Fresh cucumber are available throughout the season.This is healthy, simple and quick recipe.
Preparation time -10 min
Cooking time – 2 min for seasoning
Serves – 4
Cucumber- 1 medium size [chopped finely]
Coriander leaves – 1/2 cup [chopped]
Coconut 1/2 cup [grated]
Salt to taste.
Pepper powder 1/4 tsp [optional]
Oil – 1/2 tsp
Mustard seed – 1/4 tsp
Curry leaves – 10 to 12 leaves
Red or green chilly – 2 no s [cut into small pieces]
Take a bowl mix chopped cucumber , grated coconut, coriander leaves [chopped ], salt and keep aside.
Heat a kadai /tadka pan , add oil,when oil becomes hot add mustard seed when it starts to sparkle add curry leaves and red chilly [cut into two pieces ] and turn off the flame.Add this tadka / seasioning to the salad and mix altogether .
Enjoy as a side dish with Rice.
