Holige, a classic south Indian sweet dish prepared during the Ugadi festival. Dates Holige/ Dates Puran Poli is a yummy sweet dish prepared with fresh dates and coconut, it is an Innovative and alternative to Holige/Puran poli, in which stuffing is typically made with Dal, Jaggery, and Coconut, there are numerous versions of Holige with a variety of stuffings, Dates Holige is one among them, a healthy and a tasty dessert for any occasion.
Dates – 250 gm
Desiccated coconut – 1 cup
Jaggery – 1/2 cup crushed (adjust to your taste)
Cardamom Powder – 1 pinch optional
For Outer layer –
All Purpose flour – 1 cup
Chiroti Rava (fine semolina) – 1 cup
Turmeric – 1/4 tsp optional
Salt – 1 pinch
Oil – 1/4 cup
To prepare the Outer Layer –
Add all-purpose flour (maida), Chiroti Rava and turmeric in a bowl, toss it, add little by little of water, Knead it into a dough which is soft than a chapati dough, once done add oil again knead it to a soft dough for few mins and rest it covered for 3 hrs to get proper Holige.
To make Stuffing for Dates Holige –
Chop dates into two halves, remove the seeds, soak it in 1/2 cup warm water for 30 min, then remove the dated, add it to a mixer jar, blend it to a paste without adding water.
Now take the same water (used to soak dates) in a pan, add jaggery in it, Heat it
Stir until jaggery dissolves and the syrup gets thick in consistency.
Now add blended Dated paste, stir and bring it to boil for 1 or 2 min, add Coconut saute till it thickens, turn off the flame.
Transfer the prepared stuffing to a plate, spread it to cool,
Make the equal size of stuffing ball similar to a size of a lemon.
Once again knead the dough for few secs. Heat a flat pan on a low flame. Take a parchment paper/Banana leaf grease it with oil. Take a lemon size ball of the prepared dough, flatten it into a small round,
then place a stuffing in the center of it, cover it/stuff it, gently tap and spread it into a round shape thin Holige/Poran poli. Slide the flattened Holige/poli on your palm carefully, it comes easily
Put it in the hot pan, cook on a medium flame until light brown, apply oil if necessary.
Then flip to the other side continue to cook for few secs until few brown spots appear. Remove it from the pan and continue the same for the rest of Dates Stuffing and dough.
Delicious Dates Holige is ready to serve.
Enjoy Karjoorada Holige with a dollop of ghee.
Saute the dates till it gets thick in consistency, adding desiccated coconut helps in thickening the Dates stuffing, if not you can add more desiccated coconut to adjust the consistency.
