Egg drumstick leaves stir fry is a healthy dish and simple to prepare side dish,which can be served with roti or as a side dish for sambar rice. Drumstick leaves are highly nutritious. It is rich in iron, proteins and vitamins. It is a south Indian traditional preparation of egg curry with the combination of drumstick leaves which is delicious and aromatic.   

Preparation time – 15 min

Cooking time – 10 min

Serves – 4

Ingredients –

Drum stick leaves ( Tender) – 1 bunch

Onion – 4 no’s choppes

Coriander – 1 small bunch chopped

Mint – 1 small bunch chopped (optional)

Green chilly – 4 no’s chopped

Egg – 5 no’s

Coconut – 1/2 cup grated (optional)

Salt to taste

Oil to fry

Method – 

To make or to prepare Egg curry with drumstick leaves – 

Take out the drumstick leaves  from the spring, If the stem is tender, chop it finely. If they are not tender,remove the leaves from the stem, hence it is a must to take out only the leaves, chop it, Wash them thoroughly. Drain in a colander and keep ready.

Break eggs in a bowl and keep ready.

Heat a pan by adding oil in it. When it is hot add chopped chilies, saute.

Add chopped drumstick leaves and stir fry until raw smell evaporates from it. (do not over roast, stir fry in a medium flame)

Add chopped onion, add chopped mint and coriander together and saute until onion are translucent.

Add egg into it and stir fry till it is done.

Make a low flame, stir fry so it is done/cooked properly, add salt to taste.

Mix, stir fry. Finally add grated coconut combine, Cook in a medium high flame flame for 2 or 3 min stir continuously. Switch off the flame, cover the lid and rest it for a while before you serve.

Healthy, aromatic and nutritious egg curry is ready to enjoy as a side dish for rice or roti’s.
