Egg Moringa leaf /Drumstick leaves stir fry is a healthy dish and simple to prepare side dish, which can be served with roti or as a side dish for sambar rice. Drumstick leaves are highly nutritious. It is rich in iron, proteins, and vitamins. This is one of a south Indian traditional recipe preparation of egg curry with the combination of drumstick leaves which make a delicious and aromatic side dish.
Moringa/ Drumstick leaves – 1 bunch
Onion – 4 no’s chopped
Coriander – 1 small bunch chopped
Mint – 1 small bunch chopped (optional)
Green chilly – 4 no’s chopped
Egg – 5 no’s
Coconut – 1/2 cup grated (optional)
Salt to taste
Oil to fry
Take out the drumstick leaves from the spring, If the springs are tender, chop it finely along with the leaves. If they are not tender, remove the leaves from each spring, chop it, rinse them thoroughly. Drain in a colander and keep ready.
Break eggs into a bowl and keep ready.
Heat a pan by adding oil to it. When it is hot add chopped chilies, saute.
Add chopped drumstick leaves and stir-fry until raw smell evaporates from it. (do not over roast, stir fry in a medium flame)
Add chopped onion, add chopped mint and coriander together and saute until onion is translucent.
Add egg to it and stir fry till it is done.
Make a low flame, stir-fry so it is done/cooked properly, add salt to taste.
Mix, stir-fry. Finally add grated coconut combine, Cook in a medium-high flame for 2 or 3 min stir continuously. Switch off the flame, cover the lid and rest it for a while before you serve.
Healthy, aromatic and nutritious egg curry is ready to enjoy as a side dish for rice or rotis.
