Foxtail millet methi pulao/Navane menthya bhath is a healthy one pot nutritious meal with the goodness of fenugreek leaves and fox millet, a quick and easy to make dish with simple ingredients. Millet’s are extremely good source of fiber and protein compared with white rice. Fox tail millet is a healthy grain and alternative to rice. Do include millet in your daily diet for more health benefits to stay healthy.
Foxtail Millet – 1 cup
Fresh Fenugreek leaves – 1 cup chopped
Green peas – 1/2 cup Frozen (optional)
Coriander – small bunch chopped
Mint – small bunch chopped
Clove – 3 no’s
Cinnamon – 1 small piece
Cardamom – 1 or 2 no’s
Onion – 1 medium chopped
Tomato – 2 or 3 small chopped
Ginger garlic paste – 1 tsp
Coriander – 1 tsp
Chilly powder – 3/4 tsp Adjust to your taste
Turmeric – 1/4 tsp
Salt to taste
Oil to fry
Clean the greens, take the leaf part and tender stem part, chop it, immerse in water, drain the water from it and keep ready, keep all the other ingredients handy to start.
Heat a pressure cooker pan by adding oil in it, when it is hot add clove, cinnamon and cardamom, fry for a minute, add chopped onion, fry until translucent, add chopped fennugreek/methi leaves saute until the raw smell evaporates from it, add ginger garlic paste saute until you get a nice aroma, add chopped mint, coriander, saute until it becomes soft, then add chopped tomato saute until it becomes soft. Add green peas (frozen) saute
Rinse fox tail millet in water, remove the floating husk in it, drain and keep ready
Add coriander powder, turmeric and chili powder,
Add 3 1/2 cup of water and salt to taste, bring the mixture to boil for 2 min
Check the taste, add salt if necessary to adjust to your taste.
Add drained fox millet in to the boiling mixture, stir with a spatula , close the lid of the pressure cooker, cook it for 1 whistle, then cook in a low flame for 5 min, then switch of the flame.
Once the pressure of the cooker settles by its own, remove the lid, fluff it, to enhance the taste add 2 tsp of ghee on it, mix properly.
