Fried rice is a dish of steamed rice stir fried in a wok, often mixed with other ingredients, such as eggs, vegetables and meat. Egg Fried Rice is a popular Indo Chinese recipe. It can be prepared in a jiffy if you have cooked rice ready,  The smoky aroma of the egg fried rice is great and everyone which tastes great as a meal on its own.

Preparation time-20 min    

Cooking time-10 min      

Servings-4 to 5

Ingredients :-

Rice – 2 cups, (cooked by adding 3 1/2 cup of water ) 

Raw eggs – 4 nos, 2 for omelet and 2 for plain egg burgee   

Onion – 4 medium sized(chopped) 

Carrot – 1 cup (chopped) 

Beans – 1 cup (chopped) 

Cabbage – 1 cup (chopped) 

Capsicum – 1 cup (chopped)

Soya sauce – 3 tsp 

Chili sauce  – 3 tsp 

Ginger garlic paste – 2 tsp 

Garam masala – 1/2 tsp 

Pepper powder  – 2 tsp 

Oil – 2 to 3 tbs 

Salt – 1 tbs 

Procedure for the preparation of egg:-

Take a tawa make 2 plain omelet, and cut into small pieces and keep aside.

Take a pan add 2tsp of oil add 2 eggs and make plain burgee of it, keep aside.

Procedure for the preparation of fried rice:-

Take a large kadai and add oil to it, heat in a medium flame.

Add onion(chopped) sauté, add chopped carrot and cabbage into it fry for 2 min.

Add cabbage and capsicum.

Fry till the raw smell goes, add ginger garlic paste mix well, then add Garam masala mix properly.

Then add rice on it, before mixing the rice add soya sauce and chili sauce, salt into it ,mix all together.

Now add egg omelet pieces and egg burgee into it mix properly.

Finally add pepper powder mix well, turn off the flame add chopped coriander leaves mix all together.

Finally vegetable egg fried rice is ready to serve.
