Kadubu is a tasty snack of Karnataka, kadubu can be served for breakfast or as an evening snacks. A rice flour dough is stuffed with a savory filling and steamed. There are numerous types of kadubu made in Karnataka. Fruit kadubu is an innovative and nutritious sweet dumpling prepared with seasonal fruits like jack-fruit, mango, and banana which is authentic and delectable in taste.
For stuffing –
Coconut – 1 1/2 to 2 cups grated or shredded
Jaggery or sugar – 3/4 cup crushed or powdered adjust to your taste
Cardamom – 4 or 5 no’s crushed
Jack- fruit – 1/2 cup chopped
Mango – 1/2 cup peeled and chopped
Banana – 1/4 cup chopped
For outer layer –
Rice flour – 1 cup
Water – 1 1/2 cups
Oil/ghee – 1/2 tsp
Pinch of salt
For stuffing –
Take a bowl to add grated coconut, chopped fruits, crushed or powdered jaggery, and crushed cardamom, mix properly and keep ready.
Heat 1 1/2 cup of water in a vessel, when it begins to boil add a pinch of salt and 1/2 tsp of oil or ghee.
Add 1 cup of rice flour into, mix it with a spatula,
Remove from the flame and set covered for 10 mins
After 10 mins knead the dough as there are no lumps in it. Grease little water to your hands put the dough on a slab or plate to knead, knead it to a soft dough, make a lemon sized balls, Place it on left palm make a hole in a center and go on pressing gently to a cup shape So that stuffing can be filled, Take a spoon full of prepared sesame mixture and in the center of the prepared cup and Seal the edges.
or another easy method – roll it or press it to a 5 mm thick round shape with a roti maker,
add 2 spoons of prepared stuffing on the center.
Seal the edges, continue the same procedure for the rest
Put enough water for the base of the steamer, place a banana leaf in the container to avoid sticking, and place the stuffed dumplings so that it doesn’t touch each other, steam it for 15 mins.
Rest it uncovered for 10 mins, once cooled transfer it to a serving plate.
