Heerekai burfi or how to make ridgegourd burfi

Heerakai burfi or ridge gourd burfi is very delicious, crunchy, tasty sweet dish and it is a easy to make recipe. It is prepared with grated ridge gourd, coconut sugar, cardamon powder. It is very delicious and nutritious sweet dish with less ingredients, which makes a yummy burfi for kids. 

Preparation time : 15 min

Cooking time : 20 min

Serves : 5 to 6

Ingredients :

Heer kai (Ridge gourd) – 1 cup ( grated)

Coconut – 1 cup (grated)

Sugar – 1 cup

Ghee – 3 tbs

Cardamom- 1/2 tsp

Procedure :

Take a heavy bottomed kadai heat it add 2 tbs in it, when it becomes hot add grated ridge gourd (ensure that it is not bitter in taste).

Stir fry till the water content in the ridge gourd evaporates and cook till it becomes soft.

Add sugar stir fry the mixture till the sugar dissolves in it and syrup is formed.

When the syrup becomes thick add grated coconut mix well all together and add cardamom powder to it.

Continue to cook and stir till ghee separates from sides of it, cook in a low flame.

Then transfer the mixture into a greased plate or flat container with ghee. Gently press it with a greased spoon.

When the mixture is hot cut in to desired shape. Allow it to cool at room temperature.

Heerekai burfi is ready to be served. Transfer the dish to a air tight container and preserve it for 10 to 15 days.
