Jackfruit payasam is one of the most delicious, flavourful payasam, a thick dessert made using ripe jackfruits. It is prepared by stir-frying the jackfruit pieces in ghee and cooked along with coconut milk and jaggery. A seasonal Yummy sweet dish, an easy to make recipe with simple ingredients.
Ripe Jackfruit – 20 pieces
Jaggery – 3/4 cup crushed (adjust to your taste)
Coconut milk – 500 ml
Rice flour – 1 or 1 1/2 tbs tbs
Ghee – 1 tbs
Cashew nut – 1 tbs
Raisin – 2 Tsp
Cardamom powder – 1/4 tsp
Few saffron strands

Discard the seeds of Jackfruit and take the fruit alone, cut it into small lengthy pieces and keep ready.
Heat a heavy bottomed vessel with ghee in it, when it is hot fry cashew nut until it turns light brown then add raisin fry until it gets popped on a medium-low flame.
Once it is done remove it from the flame and set aside, in the same ghee fry chopped Jackfruit.
Fry it for 2 min take care not to fry jackfruit for a long time as it gets mushy. Once it is done remove/ transfer it to a bowl.
In the same vessel add crushed jaggery with 1/4 cup of water, bring it to boil until it gets melted completely.
Ensure the jaggery is dissolved completely then add coconut milk, bring it to boil, add saffron strands,
add ghee fried Jackfruit, boil for few mins,
Mix Rice flour with water as there are no lumps in it, add it to boiling mixture, stir and boil continuously until the mixture gets thick inconsistency on a medium-low flame for few mins. Switch off the flame. Add cardamom powder (optional) add roasted dry fruits. Add 2 tsp of fresh ghee on it. Stir.
Flavourful Jackfruit Payasam is ready to serve.
