Raw Mango rice is a very tasty, quick and easy to make recipe and it is a perfect lunch box option. Raw mango rice is usually prepared by grinding roasted spices and other is just seasoning, It is prepared almost similar as Lemon rice recipe. Rice – 2 cup
Mustard seeds – 1 tsp
Urad dal – 1 tsp
Chana dal – 2 tsp
Peanuts – 1/2 cup
Curry leaves – 3 – 4 springs
Green chilies – 4 – 5 chopped
Coriander – 1 bunch chopped
Ginger – 2 tsp grated
Asofoetida – 1 pinch (powdered)
Coconut – 1 cup grated
Raw mango – 1 medium grated
Turmeric powder – 1/2 tsp
Salt to taste
Oil to fry
To make or to prepare Raw mango rice –
Wash and drain rice, Pressure cook it by adding 4 cup of water to cook 2 cup of rice.
Keep all the ingredients ready as shown in the above image to start. Heat a kadai by adding oil in it, add mustard seeds, allow it to splutter, then Add peanuts, fry until it turns to golden brown and crisp, add dals, .
Fry until it turns to light brown, add chopped chilies, curry leaves, grated ginger and coriander saute in oil for a minute.
Add turmeric powder, salt and grated coconut remove from the flame, finally add grated raw mango into it and combine with the mixture properly.
Add cooked rice into the mixture and toss it well, so that the mixture coats the rice properly.
