Chitranna is one of the easiest and fastest rice dish to prepare. Bettada Nellikai chitranna is a healthy and delicious rice dish, though the recipe is similar to lemon rice, gooseberries gives a special taste to the dish, The health benefits of Indian Gooseberry, also known as Amla, can be partially attributed to its high vitamin C mineral and calcium content. Rice – 1 cup (cooked by adding 2 cup of water)
Mustard – 1/4 tsp
Peanuts – 2 – 3 tbs
Cashew nuts – 10 no’s optinal
Bengal gram – 1 tsp
Black gram – 1 tsp
Asafoetida – 1 pinch (powdered)
Ginger – 1 tsp grated
Curry leaves – 2 springs
Green chilies – 3 no’s chopped
Coriander – 1 bunch chopped
Gooseberry /amla – 2 -3 medium grated
Coconut – 1/4 cup grated/shredded
Turmeric powder – less than 1/4 tsp
Salt to taste
Oil – 3 – 4 tbs
Heat a pan by adding oil in it, when it is hot add mustard seeds, allow it to splutter, add peanuts, fry until it turns to golden brown, cashew nuts, add Bengal gram and black gram fry until it turn to golden,
Take care while frying, always cook in a medium flame, don’s over roast or under cook any ingredients, as it spoils the taste of the dish.
Add curry leaves, chopped chilies, little chopped coriander (remaining for garnishing) and asafoetida, saute until curry leaves splutters
Add grated gooseberry fry for a while, add turmeric, salt and grated coconut saute for a while, remove from the flame.
Add cooked rice, mix well.
Finally add chopped coriander, toss it well. Transfer the dish to a serving plate.
