Palak biryani is a healthy and delicious rice made using Indian spinach and aromatic spices. A delicious rice dish to prepare in a short time. I have used cottage cheese (paneer) and green peas as combination with the spinach, which turned out to be healthy and very delicious rice dish.
Spinach – 2 bunches
To grind –
Onion – 1 medium chopped rougly
Ginger – 1 inch chopped
Garlic – 7 – 8 cloves
Coriander – 2 tsp
Fennel seeds – 1/4 tsp
Cardamom – 1 single
Cinnamon – 2 small sticks
Cloves – 4 no’s
Green chilies – 3 no’s
Coriander – 1 small bunch
Mint leaves – few leaves
Cashew nut – 6 to 7 no’s
Poppy seeds – 1/2 tsp
Other ingredients –
Jeera rice or Basmati rice – 2 cup
Star anise – 2 no’s
Onion – 1 cup chopped
Frozen Green peas – 1/2 cup
Cottage cheese – 100 gm (cut into cubes)
Salt to taste
Ghee – 1 tbs (Optional)
Separate spinach leaves from the bunch, rinse in water for twice in water, drain the water in it.
Take a mixer jar, add all the ingredients to grind, grind it to a smooth paste and keep ready,
Add little oil in a pan and fry paneer to golden brown and set aside.
In the same pan add spinach, cook it for 3 to 4 min by closing the lid, remove from the flame, allow it to cool.
Make palak puree and keep ready.
Heat oil in a heavy bottomed pan, when it is hot add star anise, bay leaf, saute for a while, add chopped onion fry until onion turns to light brown,
Add grounded paste into it, saute in oil,
Add paneer and frozen green peas, saute in oil, close the lid and cook for 2 min
Add palak puree into it, saute together,
Add rinsed rice into it, saute
Add 3 and a 1/2 cup of water to cook 2 cup of rice, add salt to taste, bring it to boil, once it starts to boil, cook in a low flame, close the lid and cook until it is done, saute once or twice gently before it is done.
Add 1 tbs of ghee (optional) on it, combine, toss it well, close the lid, turn off the flame, rest it for 5 to 10 min before you serve.

I have used Jeera samba rice to prepare biryani, if you are preparing with basmati rice soak rice for 15 min, drain the water in it and follow the same procedure.
You can add potato or your choice of veggies to prepare this recipe.
