To make or to prepare Peanut chutney powder –
Heat a heavy bottomed pan, add peanut, fry it in a medium flame until it becomes crisp. Take care while frying it do not over roast or under cook peanut. Ensure it is roasted to crisp, remove it from the flame, set aside to cool at room temperature.
In the same pan add garlic (tamarind) dry roast till it becomes hot. switch off the flame. Remove the husk of the peanuts, when it is cooled at room temperature add a little quantity to a mixer jar, make a coarse powder in two or three batches, collect the powdered in a dry bowl or vessel. Add roasted ingredients, chilly powder and salt together or make a dry powder of roasted peanut separately with chilly powder then grind/ crush garlic cloves and mix with powdered mixture.
Delicious Peanut chutney powder or Shenga chutney is ready to enjoy with chapati, rice or with any breakfast dish. Best when it is served with curd. Transfer it to a air tight container, it can be preserved for more than a month without refrigerating.
In order to get slightly sticky form grind the mixture at low speed for short time of few seconds several times in a mixer jar.
If it get sticky, dry powder roasted gram/fried gram, mix or dry powder together ( about 50 gm of roasted gram)
If you can get ready made salted roasted peanuts, use it to make peanut chutney powder. It is extremely easy to prepare in a short time.
I have used home made chilly powder which is roasted and powdered. You can use dry red chilies to prepare this recipe. You should dry roast it separately in a medium flame.
