Prawn ghee roast is a very typical Mangalorean dish. The original dish uses chicken instead of prawns. But eventually, the prawn ghee roast recipe became more popular than the actual recipe using chicken. This Indian prawn curry has a very distinct taste.Prawn ghee roast is also easy to prepare recipe. To prepare prawn ghee roast recipe, you would have to use large jumbo prawns or you can also do with medium sized prawns as well . The key ingredient for this Mangalorean dish is ghee which gives a rich taste and flavor to the dish. 

Preparation time – 15 min

Marination time – 2 hr

Cooking time – 20 min

Serves – 4

Ingredients –

Jumbo prawns/medium sized prawns – 1 kg

Corn flour – 2 tbs

Curry leaves – 5 springs

Ghee – 3 tbs

for marination – 

Red chilly powder – 1 tsp

Turmeric powder – 1 tsp

Lemon juice – 1 tsp

Salt to taste.

How to Prepare/make prawns ghee roast – 

Clean the prawns and drain out the water. For marination add all the above ingredients in a bowl, add prawns and mix altogether properly and keep it for 2 hr in refrigerator.


After marination add Corn flour and mix so that it should be coated to all.(no need of adding water)

Heat oil in a kadai , when it is hot deep fry prawns,Add one by one into oil, so that it don’t touch each other ,fry until it turns to golden in colour ,flip to other side and fry till golden ,remove drain the excess oil in it and set aside.Continue the same procedure for rest of prawns in 2 or 3 batches.

Ingredients to prepare a paste/ for grinding –


Red chilies – 10 no’s

Coriander seeds – 1 tsp

Cumin/jeera – 1/2 tsp

Fenugreek seeds  – 1/4 tsp

Pepper – 1/4 tsp

Garlic – 8 cloves

Clove – 2 no’s

Jaggery – 2 tsp

Tamarind – small marble sized ball

Procedure – 

Heat a kadai ,add all the ingredients except jaggery and tamarind


Dry roast all the ingredients to light brown and remove from the flame.Allow it to cool.

Add all the ingredients to prepare a paste, in a mixer jar and make a fine paste by adding water


Add 2 tsp of ghee to the prepared paste and once again blend so that ghee mix with the paste properly and set aside.


Heat 2 tbs of ghee in a pan, when it is hot add grounded paste into it , fry for a while till you get a fresh aroma,add curry leaves


Mix altogether cook in a low flame  for 2 min.(No need of adding water)


Add deep fried prawns into it and mix properly so that the masala coat with each other .


Remove from the flame.


Aromatic, spicy and yummy Prawns ghee roast is ready to serve. Enjoy the dish as a side dish for chicken biryani or serve as a starter /appetizer
