South Indian cuisine is known for its healthy recipes and Rava idli is one of the simple recipe which combines the goodness of many dals and spices, it’s not just healthy and irresistible but very easy to prepare too. Nowadays there are few ready made instant rava idly packs available in the market, however nothing can beat the taste of authentic preservative free soft and fluffy homemade idli.
Cooking time- 25 min (10 min for steaming)
Serves-4 to 5.
Ingredients : –
For preparing rava idli mix –
Soji Rava(semolina) – 2 cups
Mustard seeds – 1 tsp
Chana dal – 1tsp
Urad dal – 1 tsp
Cashew nuts – 15 nos (broken into small pieces)
Coriander leaves – 1 cup (finely chopped)
Green chilies – 3 nos (finely chopped)
Oil – 3 tsp
Salt – 1 tsp
Cooking soda – 1/4 tsp
How to prepare rava idli mix
Take a Kadai add 3 tsp of oil. Add Cashew nuts stir till it becomes golden brown in colour. Remove it and keep aside.
In the same oil, add mustard seeds, when they begins to crackle add urad dal and chana dal, fry it to the golden brown, Fry all the ingredients in a medium flame.
Add chopped green chilies and chopped coriander leaves, saute in oil for 1 min, keep stirring,
Add rava (semolina) into it and fry until it turns to golden brown. Switch off the flame.
Add salt and cooking soda and mix well to the mixture and keep aside.
for preparation of idli’s
Curds – 600 ml
Carrot -2 nos (grated)
Coriander leaves – ½ cup (finely chopped)
Oil -1/2 tsp
How to prepare rava idli
Add the Rava (semolina) mixture in a bowl , add curds as required and make a batter which is neither thick nor thin in consistency, Similar to normal idli batter consistency.
Greece the idli mould with oil. Add grated carrot and coriander leaves (finely chopped). Add the batter to the mould.
Steam the rava idli in electric cooker, steamer or pressure cooker for 10-12 min. Rest it for 5 min before you serve.
Remove the rava idlis from the mould and serve the idli’s with coconut chutney and aloo palya/ bhaji as a side dish. Serve hot with ghee.
