Lady’s finger/Okra/Bendekai (Kannada)/ Bhindi (Hindi) / Bendakaya (Telugu) is used extensively in Indian cooking. Stuffed lady’s finger is a tasty side dish to enjoy with rice/roti’s, an easy to make recipe, Roasted peanuts, sesame and other spices in stuffed inside ladys’s finger and shallow fried, the preparation of this dish varies from region to region .. this is typical north Karnataka recipe, just try and enjoy as a side dish for rice or roti’s.
Lady’s finger – 300 gm
Peanuts – 1/2 cup dry roasted
Sesame – 2 tbs dry roasted
Chilly powder – 1/2 tsp
Cumin powder – 1/4 tsp
Coriander powder – 1/4 tsp
Turmeric powder – 1/4 tsp
Fresh lemon juice or tamarind juice – 1 tsp
Salt to taste
Oil to shallow fry
- Rinse lady’s finger in water drain water, pat dry, cut both the edges, make a lengthy slit in the center of each veggie and keep ready.
- Add roasted peanuts, sesame seeds in a mixer jar, blend it to a coarse powder, add it to a clean bowl
Add all the spice powder, salt, toss it well
Add lemon juice/tamarind juice mix with the mixture properly,
Stuff inside each veggie, heat oil in a pan to shallow fry
When the oil is hot, gently arrange stuffed veggies, cook in a medium flame, close the lid for 2 min, stir gently once or twice before it is done, it take 5 to 6 min to be done. (take care not to over roast /burn as it spoils the taste of the dish)
Once done switch off the flame, transfer it to a serving plate, and enjoy as a side dish for sambar rice/roti’s..it taste great with curd rice as well.
