Stuffed ridge gourd curry recipe

Stuffed ridge gourd curry is a typical north Karnataka style curry, a healthy and tasty curry prepared with ridge gourd. For stuffing roasted peanut powder and roasted nigella seeds are the key ingredients with other simple spice which makes a delicious curry to enjoy with Jowar roti , chapati or roti’s.


Ridge gourd – 1 medium size (tender) cut into 4 pieces

Roasted peanuts – 3/4 cup

Nigella seeds – 1 1/2 tbs

chilly powder – 1 1/2 tsp

Turmeric powder – 1/4 tsp

Tamarind – marble size ball

Jaggery – 1 1/2 tsp powdered (optional adjust to your taste)

Onion – 1 medium chopped

Curry leaves – 1 spring

Mustard seeds – 1/2 tsp

Salt to taste

Oil to fry


Peel the outer layer of a ridge gourd, (always ensure the taste before you start, if the ridge gourd taste sweet then it is prefect to prepare the curry, if it tastes bitter then it is not preferable to make, as it spoils the taste of the dish).

Soak tamarind in luke warm water,

Cut the ridge gourd into 4 equal pieces as shown in the image, and keep ready.


Add dry roasted peanuts and dry roasted nigella seeds in a mixer jar make a powder and keep ready.


Add prepared powder in  a bowl, add chilly powder, turmeric powder and salt, toss it well, add jaggery powder, squeeze soaked tamarind and remove the waste from it, add tamarind juice into the mixture and mix it to a thick paste.


Cut the each ridge gourd into 4 slits keeping the edge intact  ( same as we cut to stuff brinjal) stuff the prepared stuffing inside each pieces, tie it with the thread as the stuffing don’t  come out while cooking it.


Heat a pan by adding oil in it, when it is hot add mustard seeds allow it to sizzle in oil, add curry leaves, chopped onion fry until onion turns light brown in colour.


Add stuffed ridge gourd into, saute gently, until it becomes hot.


Add remaining stuffing on it, add little water to cook, combine, close the lid of the pan and cook in a low flame until it is done.


Ensure that the ridge gourd is done, switch off the flame, remove the thread before you serve.


Aromatic, Healthy and delicious Stuffed ridge gourd curry is ready to enjoy as a side dish for  Jowar roti, or chapati or with pulka’s.
