Sweet pumpkin raitha requires very few ingredients and very easy to prepare. Sweet pumpkin raitha goes well with rice as a side dish. Delicious among all the raitha’s is Pumpkin raitha, as pumpkin gives special taste and flavor to the dish.

Serves – 4
Sweet pumpkin – 1 cup (cut into medium pieces)
Yogurt – 1 cup
Coconut (grated) – 2 tbs
Mustard seeds – ¼ tsp
Green chili – 2 nos
Turmeric powder – 1 pinch
Cumin seeds – 1/4 tsp
Curry leaves – 10 to 12 leaves
Coriander leaves – 1/4 cup (chopped)
Asafoctide (hing) – 1 pnich
Oil or ghee – 1/2 tsp
Salt to taste
Cook pumpkin pieces and green chilies in a kadai or pressure cook in a pan.
Allow them to cool and smash altogether into a paste.
Heat a tadka pan, add oil /ghee in it. When it becomes hot add mustard seed, when it begins to crackle add cumin seed, curry leaves, a pinch of hing (asafoctide), a pinch of turmeric powder.
Add this seasoning to the smashed pumpkin mixture and mix all together. Add grated coconut, chopped coriander, salt to taste.
Finally add one cup of yogurt and mix.
Sweet pumpkin raihta is ready to serve.
