Vegetable cutlets are simple, easy and delicious snack dish, that can be served for an evening snack. This is a basic recipe to make a mixed vegetable cutlet which is healthy, nutritious and really easy to make snack dish for an evening snack, to serve with any of your favorite dip or sauce with a cup of tea.
Potatoes boiled and mashed – 5-6
French beans chopped – 1/4 cup
Carrot – 1/4 cup chopped
Beetroot grated – 1/2 cup (optional)
Green peas – 1/2 cup
Ginger Garlic paste – 1 tsp
Onion finely chopped 1 medium
Green chilies finely chopped – 1-2
Red chilli powder – 1 teaspoon
Garam masala powder – 1/2 tsp
Dry mango power (Amchur) – 1/4 tsp
Chaat masala powder – 1/2 tsp
Salt to taste
Oil to shallow fry
Cashew nuts – 3 tbs (roasted)
All purpose flour – 2 tablespoons
Fresh coriander leaves chopped – 2 tbs
Bread – 2 slice
Bread crumbs – 1 cup
Pressure cook potatoes for 4 to 5 whistles, when it is cooled enough, peel the skin, mash it and set aside, Add chopped veggies in the pressure pan, add little salt to taste, add 1 cup of water and pressure cook it for 1 whistle. when it is don drain the water in it completely, add boiled veggies into potatoes, mash together gently.
Remove the edges of the bread slices, dip it in water, squeeze it, remove the water in it, add it to the veggie mixture, add ginger garlic paste, dry powders, chopped coriander, chili, salt to taste. Mix it well.
Add all purpose flour in a bowl, add water and make batter (similar to dosa batter in consistency) keep all the ingredients ready as shown above.
Take a big lemon size ball of prepared veggi mixture, tap it gently to a round shaped patties.
Dip it in the batter, so that it coats the patties, quickly put it on the bread crumbs, coat it with
Heat a shallow pan by adding oil in it, when it is hot, place the cutlet on it, shallow fry it in a medium flame.
Fry until the base turns to golden brown and crisp, gently turn to the other side to fry.
Shallow fry till both the sides are evenly golden.
when it is done remove it, place it on a kitchen towel, to absorb excess oil in it.
