Vegetable pulao is an  healthy, easy and quick  pulao recipe cooked in a pressure cooker. one pot comfort meal for one and all, a spicy rice dish prepared by cooking rice with various vegetables and spices. This is my mom’s vegetable pulao recipe and one of our favorite rice recipe, to prepare this pulao, i have added double beans, carrot, french beans, capsicum, potato,cauliflower, tomatoes and onion. You can also add your choice of veggies to prepare this pulao.

Serves – 5

Ingredients to prepare Vegetable pulao – 


Rice – 2 cup

Bay leaves – 3 no’s

Fennel seeds – 1 tsp

Cloves – 10 no’s

Cardamom – 4 no’s

Star anise – 2 no’s

Cinnamon – 2 medium sticks

Mace – 2 no’s

Onion – 3 no’s chopped

Tomato – 5 medium chopped

Green chilies – 4 no’s

Mint leaves – 1 bunch chopped

Coriander – 1 bunch chopped

Carrot – 1 cup chopped

Beans – 1 cup chopped

Capsicum – 1 cup chopped

Double beans – 1 cup

Potato – 1/2 cup chopped

Cauliflower – 1 cup chopped

Coriander powder – 2 tsp

Chilly powder – 1 tsp

Turmeric powder – 1/2 tsp

Fresh Ginger garlic paste – 2 tbs

Ghee – 1 tbs

Salt to taste

Oil to fry.

How to prepare or to make vegetable pulao – 

Rinse the rice till the water runs clears of starch, then soak rice for 10 to 15 min and drain the water and set aside.

Heat a pressure pan by adding oil in it,when it is hot add all the spices


Fry for a while. Add chopped onion, whole green chilies, chopped mint and coriander together


Fry until onion turns translucent


Add ginger garlic paste and saute till you get a fresh aroma


Add chopped tomatoes and saute /cook until it becomes soft


Add all vegetables together, fry for a while


Add coriander powder, chilly powder and turmeric powder and stir fry.


Add 3 and a half cup of water to cook 2 cup of rice,bring it to boil add salt to taste. check the taste of the stock. if it tastes bland, then add some more salt.


Add soaked and drained rice into it


Stir it gently, bring it to boil


Add 1 tbs of ghee into it. Close the lid of the pressure pan and cook in a low flame for 10 min. Turn off the flame, allow it to cool.


when the pressure settles down on its own, remove the lid and gently fluff the rice.



Aromatic vegetable pulao is ready to be seved.This pressure cooked vegetable pulao goes well with onion-tomato raita or salad also accompany some onion slices, cucumber slices and lemon wedges.

Tips – 

Whole green chilly is added to prepare this pulao, which enhance the taste and also who ever wants to have hot/spicy can squeeze and enjoyed with pulao.

When the stock begins to boil 1 tbs of ghee is added which gives a rich taste to pulao and also rice doesn’t get sticky.

When the lid of the pressure pan is closed, cook in a medium flame till the pressure reaches to high and make/cook in a low flame for 10 min, no need to bring out whistle,the pulao will be done perfectly as the rice been soaked and drained.
